In addition, Michael is himself an award-winning brewer. He writes a monthly column on beer for the Minneapolis Star Tribune. Caves of Faribault
Legend holds that the first blue cheese was born in the natural caves of France where ideal humidity and temperature conditions allowed native blue green molds to flourish. That tradition lives on at Faribault Dairy Company, where every hand made batch of award winning Amablu® and St. Pete’s Select™ blue cheese is aged in sandstone caves carved from the river bluffs overlooking Faribault, MN.
The theme of their session will be Making Cheese With Beer. The cheese makers from the Caves of Faribault will talk about how they do the Blues & Brews series of cheeses bathed in beer and how they made fresh cheese curds in hops and will do a special release of said Cascade Hop Cheese Curds to those who attend the session.

Paul - Hippity Hops Farm
Hippity Hops is Minnesota’s largest producer of hops with 150 Cascade plants. In May of 2009, 75 rhizomes were planted on land just Northeast of Forest Lake, MN. That fall roughly 12 pounds were harvested off of the 75 plants in the first year. Majority of the hops were sold to Lake Superior Brewing.
